Here's my first effort at this. I'm planning on changing a couple things that will affect even the humans. I want everyone to start at full mana. This way, when you start a new character, if you put points into mana, it will matter because it will increase your maximum, not just your current mana level. Also, I'm going to increase the default speed for humans a bit. This is partly because people who don't put any points into speed are too slow and also because the default for dwarves needs to be slower and the default for gnomes needs to be even slower than that without being ridiculous.
Some of you may notice that I included the "magic" stat even though it doesn't do anything. That might change and I'd rather go ahead and set it at a level that reflects the inherent magical inclinations of each species now while I'm thinking about it.
Humans
Health 100 Mana 30 Strength 10 Dexterity 20 Speed 18 Toughness 10 Magic 10
Elves
Health 90 Mana 40 Strength 8 Dexterity 30 Speed 20 Toughness 8 Magic 15
Dwarves
Health 80 Mana 15 Strength 15 Dexterity 15 Speed 15 Toughness 30 Magic 10
Gnomes

wouldn't it more, let's say normal, that dwarves have more hp than humans?

That's a bit of a dilemma. Humans are larger so I think logically they should be capable of withstanding more damage.
In the Lord of the Rings movies and video games the dwarf Gimli seems to be far more capable of withstanding damage than a human. Then again, I don't think the author of the original books (J. R. R. Tolkien) ever said dwarves were tougher than humans. He indicated that they were tough, but not necessarily that tough.
For that reason, I don't know what's the best approach.
I did give the dwarves a "toughness" factor of 30 while humans have 10. The idea is that the same blow might not harm a dwarf as much, but he's still smaller and can withstand less injury.
But this was just a first draft. What do you think the health for dwarves should be? 110? Now that I look at the dwarf stats again, maybe they do need some additional advantage to be comparable to other players.

@ Charles: 110 will be a good value in my book. but like I said, these will certainly need further tweaking once we can see the effects on the actual gameplay.

I tweaked the stats a bit, here it is:
Humans
Health 100 Mana 30 Strength 10 Dexterity 20 Speed 20 Toughness 15 Magic 10
Elves
Health 110 Mana 40 Strength 8 Dexterity 30 Speed 22 Toughness 10 Magic 25
Dwarves
Health 80 Mana 10 Strength 15 Dexterity 15 Speed 12 Toughness 30 Magic 10
Gnomes
Health 60 Mana 60 Strength 5 Dexterity 25 Speed 13 Toughness 7 Magic 25
I gave the elves more health because generaly elves live longer then humans. Wich is also why i raised the speed of them. I raised the health of the dwarves because they are usually of a much bigger build and will need the extra health carying the type of weapons they do. I also raised the speed of the gnomes a little bit do to there small size, it should be harder to catch an elf.
I made a couple of other changes...tell me what you think. Thanks.

LMAO Elves with 110 Health Dang he / she must be part Dwarf or Barbarian.
Should it not be. Dwarfs, Humans, Elves, Gnomes. and as for Magic it should be Elves, Gnomes, Humans, Dwarfs. or you start them all of the same and let the Owner of the toon build it as he / she sees fit. or stat them with all ZERO to start and give them 100 points to spend on whatever they want in there toon.

This isn't necessarily permanent, but in version 01.55, the default starting stats will be as follows. Keep in mind everyone gets to add 10 points wherever they want. These numbers are a compromise between my original suggestion and some of the feedback I got from players.
Humans
Health 100 Mana 30 Strength 10 Dexterity 20 Speed 18 Magic 10 Toughness 12
Elves

Also on the topic of stats, I think there should some way of improving your stats.
My idea was a dojo or something of that nature where a npc can "train" you for a fee and raise a stat of your choice.
And maybe once you raise your up by 10 you grow a level. (Since there is no way to level up yet). This would be consistent with people creating characters, since they start out with 10 points and start at level 1
